Dad’s Pine Nut Cookies

Ingredients

  • 8 oz. almond paste – crumbled
  • ¼ cup white sugar
  • Pinch of salt
  • 1 teaspoon almond extract
  • ½ cup flour
  • 1 large egg white
  • 2 cups pine nuts

Process

Pre-heat oven to 325 degrees

Put all ingredients except for the egg white and pine nuts into the work bowl of your food processor. Pulse until mixture is a fine powder. Just a few pulses. Then add egg white and pulse again. The mixture will be crumbly. Dump the mixture into a mixing bowl and form into a ball with your hands. Place the pine nuts into a spare small bowl. Then with a wet teaspoon or scoop, measure out a teaspoon of the dough and roll into a ball with your damp hands. The mixture will be very sticky and having your hands dampened will help prevent the dough from sticking to your hands. Then roll the dough balls in the pine nuts, applying enough pressure to make sure that the nuts stick to the dough. Then, with the palm of your hands, flatten the dough ball into cookies on a parchment-lined cookie sheet about 1 inch apart.

Bake the cookies for 20 -22 minutes or until lightly browned. Let cool 5 minutes then transfer to a cooling rack.
