Duck Egg Pasta Dough


  • 12 oz. 00 Flour
  • 2 Duck eggs
  • 4 large chicken egg yolks
  • Pinch of salt


Place flour in the mixing bowl of a stand mixer fitted with a dough hook. Add the eggs and yolks directly into the center of the four. Add the salt. Starting at a low speed have the hook stir the pasta. You can increase the speed as the dough befins to come together. When dough shapes into a ball let it run a few minutes longer to kneed the dough. If the dough sticks just addflour a little bit at a time until the dough is no longer sticky. Pull dough from the hook with your hands form into a ball. cover with plastic wrap and let rest 1 hour.

Shape pasta any way you like. Make sheets for ravioli or cut into Pappardelle. The options are endless.
