Truly Italian Tomato Sauce

This sauce is so rich and thick and screams Italy! The key to this sauce is the quality of its main ingredient, the tomatoes. It is very important to use San Marzano tomatoes grown in Italy. I always use Cento. You can literally taste Italy in each bite. I believe tomatoes like grapes in wine have a terroir. Try this sauce and you will be hooked. You will never buy cheap tomatoes again. I use this sauce on fresh and dry pasta, my Chicken Parmigianino and many other dishes.  

Ingredients

  • 2 28 oz. Cans of Cento San Marzano Peeled tomatoes
  • 4-6 tablespoons Olive Oil
  • 1 medium Onion diced
  • 10 Basil leaves
  • 3 cloves of Garlic
  • ¼ teaspoon Red Pepper flakes
  • Salt and pepper to taste

Process

Open the cans of tomatoes and pour into a large mixing bowl. Using your hands crush the tomatoes. Get your hands dirty! Pour olive oil into a large pot. Add the onions and sauté until translucent. Then add garlic, basil, and red pepper flakes. Sauté onions until just slightly golden. Then add tomatoes and season with salt and black pepper. Simmer on low heat for 45 minutes continually tasting and checking for salt.
